Description/Job Summary

Blackstone Consulting, Iin is currently hiring for a Dining Facility Manager for their site at the Presidio of Monterey, CA.  This role is responsible for insuring a highly proficient operation of their assigned facility, which is constantly ongoing.

Those responsibilities include, but no limited to the following:
  • Insuring that administration is maintained in accordance with the contract.
  • That cash collection is turned in as required.
  • That subsistence items are maintained.
  • Food items are prepared IAW with prescribed instructions.
  • That hot food tables are maintained at prescribed temperatures, cold line temperatures are maintained.
  • That food is properly garnished prior to placing on the serving lines.
  • That food is properly served each to each diner.
  • That serving lines are clean as required, including taco bar, salad bar, beverage area during the serving periods.
  • Ensure that all spills are cleaned within five minutes.
  • Ensure that adequate expendable items are available for use.
  • That storage rooms are maintained in an orderly fashion and security is maintained.
  • That work orders are promptly called in as necessary, work order log maintained.
  • That open/close schedules are observed, and arrangements are made for closing after spraying, and someone is available for entry into the facility with maintenance individual(s).
  • That energy and water conservation is enforced at all times.
  • That facility is always ready for medical inspection.
  • Those accident/insurance papers are immediately completed when an accident occurs.
  • Ensure all medical paper(s) from the injured individual.
  • During absence of the contract manager, all instructions issued by the government are properly executed.
  • Duties may be delegated, the responsibility remains with the manager.
Skills needed are but not limited to:
  • Must be able to type 50wpm.
  • Must have at least five years in food service management experience or at least three years in an institutionalized food service atmosphere.
  • ServSafe certification a plus.
